Smoky Chipotle Lamb Loin

Ingredients

- 1 1/2 teaspoons garlic salt
- 1 teaspoon ground chipotle chile pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 (3 1/2 lb) boneless lamb loin roast
Recipe
- 1 combine the garlic salt, chipotle chile pepper, cumin, and coriander; rub over lamb.
- 2 cover and refrigerate 2-8 hours.
- 3 let stand at room temperature 30 minutes before cooking.
- 4 preheat oven to 375°.
- 5 line a rimmed baking sheet with foil and place an ovenproof wire rack on top.
- 6 place lamb on rack; bake for 1 hour or until a meat thermometer inserted into the thickest portion reads 145° or desired degree of doneness (for me, that is 160°).
- 7 carefully transfer lamb to a serving platter or carving board.
