Lamb Chop Potato Bake

Total Time: 1 hr 20 mins Preparation Time: 10 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 4
  • 4 ribs or 4 shoulder lamb chops
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 medium onion, sliced
  • 4 medium potatoes, peeled and sliced (2 lb)
  • 1 (11 ounce) can condensed cheddar cheese soup, undiluted

Recipe

  • 1 preheat oven to 350f.
  • 2 wipe lamb with damp paper towls.
  • 3 trim off extra fat.
  • 4 heat fat in medium skillet.
  • 5 in hot fat, brown chops well on both sides, sprinkling with salt and pepper.
  • 6 drain well on paper towels place lamb chops in a 2 qt shallow casserole.
  • 7 arrange onion slices, then potato slices, over top.
  • 8 spoon cheese soup over all bake covered, 1 hour or until meat and potato are tender.
