Lamb Chop Potato Bake

Ingredients
- Servings: 4
- 4 ribs or 4 shoulder lamb chops
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 medium onion, sliced
- 4 medium potatoes, peeled and sliced (2 lb)
- 1 (11 ounce) can condensed cheddar cheese soup, undiluted
Recipe
- 1 preheat oven to 350f.
- 2 wipe lamb with damp paper towls.
- 3 trim off extra fat.
- 4 heat fat in medium skillet.
- 5 in hot fat, brown chops well on both sides, sprinkling with salt and pepper.
- 6 drain well on paper towels place lamb chops in a 2 qt shallow casserole.
- 7 arrange onion slices, then potato slices, over top.
- 8 spoon cheese soup over all bake covered, 1 hour or until meat and potato are tender.
