Lamb Chops And Sweet Potatoes

Ingredients

  • Servings: 4
  • 3 sweet potatoes
  • 1/2 cup currant jelly
  • 4 lamb chops
  • 1/2 cup orange juice
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon pepper
  • 1 lemon, rind of (grated)
  • 1/4 cup flour
  • 1 teaspoon dry mustard
  • 2 tablespoons shortening
  • 1 teaspoon paprika
  • 2 tablespoons butter
  • 1/2 teaspoon ginger, ground

Recipe

  • 1 preheat oven to 350 degrees fahrenheit.
  • 2 boil sweet potatoes in water until tender, peel and slice. time will depend upon size of your sweet potatoes.
  • 3 salt and pepper the chops and dredge in flour. brown in shortening.
  • 4 in a bowl, melt butter. stir in jelly, juices, and lemon rind.
  • 5 add remaining ingredients, stirring to blend.
  • 6 arrange potatoes and chops in a casserole dish and cover with 6 tablespoons sauce. bake 30 to 40 minutes, basting occasionally.
