- 3 sweet potatoes
- 1/2 cup currant jelly
- 4 lamb chops
- 1/2 cup orange juice
- 1/2 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon pepper
- 1 lemon, rind of (grated)
- 1/4 cup flour
- 1 teaspoon dry mustard
- 2 tablespoons shortening
- 1 teaspoon paprika
- 2 tablespoons butter
- 1/2 teaspoon ginger, ground
Recipe
- 1 preheat oven to 350 degrees fahrenheit.
- 2 boil sweet potatoes in water until tender, peel and slice. time will depend upon size of your sweet potatoes.
- 3 salt and pepper the chops and dredge in flour. brown in shortening.
- 4 in a bowl, melt butter. stir in jelly, juices, and lemon rind.
- 5 add remaining ingredients, stirring to blend.
- 6 arrange potatoes and chops in a casserole dish and cover with 6 tablespoons sauce. bake 30 to 40 minutes, basting occasionally.
