Lamb Tenderloin With Broccoli And Pineapple

Ingredients

  • Servings: 1
  • 1/2 a lemon, juice of
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon dried parsley
  • 1/8 teaspoon dried rosemary
  • 1/8 teaspoon sea salt
  • 1 pinch stevia
  • 1 pinch ground cinnamon
  • 4 -6 ounces sliced lamb tenderloin
  • 3 cups broccoli florets
  • 1/2 cup grilled pineapple

Recipe

  • 1 mix lemon juice, herbs, salt, stevia and cinnamon in a zippered bag. add lamb. marinate in refrigerator for at least 30 minutes, though overnight is best.
  • 2 grill lamb over high heat turning one to two times for about 5-6 minutes total. grill broccoli and pineapple for 30 seconds a side in a grill basket. remove and serve with tenderloin.
  • 3 if you don't have a grill, you can broil the lamb and pineapple. heat he broiler pan first and add the pineapple just before serving.
