Lamb Tenderloin With Broccoli And Pineapple

Ingredients

- 1/2 a lemon, juice of
- 1/4 teaspoon minced garlic
- 1/4 teaspoon dried parsley
- 1/8 teaspoon dried rosemary
- 1/8 teaspoon sea salt
- 1 pinch stevia
- 1 pinch ground cinnamon
- 4 -6 ounces sliced lamb tenderloin
- 3 cups broccoli florets
- 1/2 cup grilled pineapple
Recipe
- 1 mix lemon juice, herbs, salt, stevia and cinnamon in a zippered bag. add lamb. marinate in refrigerator for at least 30 minutes, though overnight is best.
- 2 grill lamb over high heat turning one to two times for about 5-6 minutes total. grill broccoli and pineapple for 30 seconds a side in a grill basket. remove and serve with tenderloin.
- 3 if you don't have a grill, you can broil the lamb and pineapple. heat he broiler pan first and add the pineapple just before serving.
