Lamb Tenderloin With Tomato Sauce

Ingredients

- 2 slices bacon
- 1 -1 1/2 lb lamb tenderloin
- 1/3 cup chopped onion
- 1 tablespoon butter or 1 tablespoon margarine
- 1 (8 ounce) can tomato sauce
- 3 tablespoons chopped sweet pickles or 3 tablespoons sweet pickle relish
- 2 tablespoons vinegar
- 1 teaspoon dried parsley flakes
- 1 teaspoon sugar
Recipe
- 1 arrange bacon slices over lamb tenderloin.
- 2 place tenderloin on rack in a shallow roasting pan.
- 3 tuck thin end of meat under.
- 4 roast, uncovered, at 350 degrees for about 25 to 35 minutes, or until internal temperature is around 160 degrees.
- 5 in a saucepan over medium-low heat, melt butter.
- 6 cook chopped onion in butter until tender; add tomato sauce, sweet pickle, vinegar, parsley flakes and sugar.
- 7 simmer, uncovered, for 10 minutes.
- 8 serve with roasted lamb tenderloin.
