Lamb Veronique

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 lamb tenderloin, sliced
  • 2 tablespoons butter
  • 2 shallots, minced
  • 1 clove garlic, crushed
  • 1/4 cup vermouth
  • 1 cup chicken broth
  • 1 cup water
  • 1 tablespoon cornstarch
  • 1 cup green seedless grape
  • 2 oranges, peeled and sectioned
  • 1/4 teaspoon rosemary
  • 2 tablespoons parsley

Recipe

  • 1 flatten lamb tenderloin slices.
  • 2 cook in butter 3 minutes on each side.
  • 3 remove to hot platter and keep warm.
  • 4 sauté shallots and garlic until soft.
  • 5 stir in vermouth and boil until reduced by 1/2.
  • 6 add chicken broth, water, rosemary, parsley and thicken with veloutine.
  • 7 add grapes and oranges.
  • 8 pour over lamb slices.
