Lamb With Apple Butter Sauce

Total Time: 11 mins Preparation Time: 1 min Cook Time: 10 mins

Ingredients

  • Servings: 2
  • olive oil flavored cooking spray
  • 3/4 lb boneless butterfly lamb loin chop
  • 2 teaspoons dried rosemary
  • salt & freshly ground black pepper
  • 1/2 cup apple butter
  • 4 teaspoons prepared horseradish
  • 2 tablespoons apple cider vinegar

Recipe

  • 1 heat a nonstick skillet on medium high and spray with olive oil spray.
  • 2 remove fat from lamb and sprinkle with rosemary.
  • 3 press rosemary into chops on both sides.
  • 4 add to skillet and brown 2 minutes.
  • 5 turn and brown second side 2 minutes.
  • 6 sprinkle cooked side with salt and pepper to taste.
  • 7 lower heat to medium low, cover and cook 2 minutes.
  • 8 a meat thermometer should read 160 degrees.
  • 9 meanwhile mix apple butter, horseradish and cider vinegar together.
  • 10 place lamb chips on dinner plates and pour pan juices on top.
  • 11 served seasoned apple butter on the side.
