Slow Cooker Irish Stew

Total Time: 10 hrs 15 mins Preparation Time: 15 mins Cook Time: 10 hrs

Ingredients

  • Servings: 6
  • 1 1/2 lbs boneless lamb shoulder, cut in 1 inch cubes
  • 6 small potatoes, sliced
  • 6 small onions, quartered
  • 6 carrots, sliced
  • 2 teaspoons dried rosemary
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups water

Recipe

  • 1 combine all ingredients in slow cooker.
  • 2 cover and cook on high for 1 hour.
  • 3 reduce heat to low and cook until lamb and vegetables are very tender, 10-12 hours.
  • 4 season to taste with salt and pepper. discard bay leaf.
