Slow Cooker Irish Stew

Ingredients
- Servings: 6
- 1 1/2 lbs boneless lamb shoulder, cut in 1 inch cubes
- 6 small potatoes, sliced
- 6 small onions, quartered
- 6 carrots, sliced
- 2 teaspoons dried rosemary
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 2 cups water
Recipe
- 1 combine all ingredients in slow cooker.
- 2 cover and cook on high for 1 hour.
- 3 reduce heat to low and cook until lamb and vegetables are very tender, 10-12 hours.
- 4 season to taste with salt and pepper. discard bay leaf.
