Potato Soup With Bacon

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 1/2 lb bacon, diced
  • 1 small onion, diced
  • 2 tablespoons flour
  • 15 ounces chicken broth
  • 3/4 cup water
  • 1/2 teaspoon dried thyme
  • 1 pinch garlic powder
  • 1 pinch onion powder
  • 1/2 teaspoon salt (or more)
  • 1 cup milk
  • 4 cups potatoes, diced

Recipe

  • 1 heat olive oil in bottom of soup pot; add bacon, cook until bacon is almost crisp but still limp.
  • 2 add onion and cook a few minutes more.
  • 3 remove bacon and onion with slotted spoon and set aside.
  • 4 add flour and stir until blended; slowly add the broth, stirring all the while. add water and bring to boil whisking or stirring until smooth and thickened.
  • 5 add thyme, garlic powder, onion powder and salt. taste. add more seasoning according to your preference if needed.
  • 6 add milk, stir and reduce heat to simmer.
  • 7 add potatoes and bacon.
  • 8 cover and continue to simmer until potatoes are tender, about 20 minutes. taste and add more salt if needed.
  • 9 serve.
