Lamb Chops Braised With Cider And Apples

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 4 (3/4 inch) center-cut lamb loin chops
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 1 large onion, thinly sliced
  • 1 small tart apple, cored, thinly sliced
  • 1/2 cup apple cider
  • 1/4 cup apple cider vinegar
  • 2 bay leaves
  • salt
  • pepper

Recipe

  • 1 season lamb chops generously with salt and pepper.
  • 2 heat oil in heavy large skillet over medium-high heat.
  • 3 add lamb to skillet and cook until brown and cooked through, about 5 minutes per side.
  • 4 transfer lamb to platter. tent with foil to keep warm.
  • 5 drain off all by 2 tablespoons of drippings from skillet.
  • 6 add butter to skillet. once butter is melted add onion, and saute until onion is almost soft, about 5 minutes.
  • 7 mix in apples,cider, vinegar and bay leaf.
  • 8 cover skillet and cook onions and apples are tender, about 10 minutes.
  • 9 discard bay leaves.
  • 10 add any accumulated juices from lamb chop platter to skillet.
  • 11 increase heat and cook until sauce thickens slightly, about 3 minutes.
  • 12 spoon sauce over lamb chops and serve.
