Lamb Verde Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb boneless lamb chop, cut in small bite-size pieces
  • 1 onion, diced
  • 1 (16 ounce) jar salsa verde
  • 1 (10 3/4 ounce) can low sodium chicken broth
  • 2 (15 ounce) cans great northern beans, drained and rinsed
  • 1 1/2 teaspoons cumin

Recipe

  • 1 saute lamb and onion in a large skillet over medium high heat until onion is tender and lamb is cooked through.
  • 2 add salsa verde, chicken broth, beans and cumin and mix.
  • 3 cover and simmer 15 minutes.
