Lamb Verde Soup

Ingredients
- Servings: 4
- 1 lb boneless lamb chop, cut in small bite-size pieces
- 1 onion, diced
- 1 (16 ounce) jar salsa verde
- 1 (10 3/4 ounce) can low sodium chicken broth
- 2 (15 ounce) cans great northern beans, drained and rinsed
- 1 1/2 teaspoons cumin
Recipe
- 1 saute lamb and onion in a large skillet over medium high heat until onion is tender and lamb is cooked through.
- 2 add salsa verde, chicken broth, beans and cumin and mix.
- 3 cover and simmer 15 minutes.
