Lamb With Artichokes And Capers

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 lamb chops
  • 1 -2 tablespoon olive oil
  • 1 small shallot, finely chopped
  • 1 tablespoon capers, drained
  • 1/4 cup chicken broth
  • 1 teaspoon dijon mustard
  • 1 cup artichoke heart, drained, rinsed, and halved

Recipe

  • 1 heat olive oil in nonstick skillet over medium high heat.
  • 2 add lamb chops and cook 3-4 minutes per side.
  • 3 add shallot and capers to the skillet. cook 1-2 minutes, stirring frequently.
  • 4 stir in chicken broth, mustard, and artichokes.
  • 5 reduce heat to medium low and simmer for 10 minutes or until lamb is done cooking (cooking time will depend on the thickness of the lamb chops).
