Lamb With Artichokes And Capers

Ingredients

- 4 lamb chops
- 1 -2 tablespoon olive oil
- 1 small shallot, finely chopped
- 1 tablespoon capers, drained
- 1/4 cup chicken broth
- 1 teaspoon dijon mustard
- 1 cup artichoke heart, drained, rinsed, and halved
Recipe
- 1 heat olive oil in nonstick skillet over medium high heat.
- 2 add lamb chops and cook 3-4 minutes per side.
- 3 add shallot and capers to the skillet. cook 1-2 minutes, stirring frequently.
- 4 stir in chicken broth, mustard, and artichokes.
- 5 reduce heat to medium low and simmer for 10 minutes or until lamb is done cooking (cooking time will depend on the thickness of the lamb chops).
