Lamb With Paprika & Olives

Total Time: 2 hrs 45 mins Preparation Time: 45 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 lb lamb, leg, diced
  • olive oil
  • 1 red onion, cut into thin wedges
  • 2 garlic cloves, crushed
  • 3 1/2 ounces chorizo sausage, cut into chunks
  • 1 teaspoon smoked paprika
  • 1 (14 ounce) tin chopped tomatoes
  • 1 cup chicken stock
  • 1 (14 ounce) can chickpeas
  • 7 ounces green olives, drained and rinsed
  • 1 lemon, zested and juiced
  • 1/2 ounce parsley, chopped

Recipe

  • 1 heat the oven to 300°f
  • 2 season then brown the lamb all over in a little oil. scoop out then cook the onions and garlic in the same pan till softened.
  • 3 add the chorizo and paprika and cook for 2 minutes then add the tomatoes, stock and lamb.
  • 4 put on a lid and cook in the oven for an hour.
  • 5 add the chickpeas and olives and cook for another hour.
  • 6 stir in the lemon and parsley and serve with crusty bread.
