Lamb With Paprika & Olives

Ingredients

- 1 lb lamb, leg, diced
- olive oil
- 1 red onion, cut into thin wedges
- 2 garlic cloves, crushed
- 3 1/2 ounces chorizo sausage, cut into chunks
- 1 teaspoon smoked paprika
- 1 (14 ounce) tin chopped tomatoes
- 1 cup chicken stock
- 1 (14 ounce) can chickpeas
- 7 ounces green olives, drained and rinsed
- 1 lemon, zested and juiced
- 1/2 ounce parsley, chopped
Recipe
- 1 heat the oven to 300°f
- 2 season then brown the lamb all over in a little oil. scoop out then cook the onions and garlic in the same pan till softened.
- 3 add the chorizo and paprika and cook for 2 minutes then add the tomatoes, stock and lamb.
- 4 put on a lid and cook in the oven for an hour.
- 5 add the chickpeas and olives and cook for another hour.
- 6 stir in the lemon and parsley and serve with crusty bread.
