Perfect Roast Lamb With Crackling

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • Servings: 6
  • 1 kg lamb loin, scored and tied
  • water
  • 3 sprigs fresh rosemary (large sprigs)
  • 1 tablespoon salt

Recipe

  • 1 preheat oven to 240oc. place lamb on a trivet in a baking dish, skin side down.
  • 2 pour enough water into the baking dish so as not to touch the lamb. add the rosemary to the water.
  • 3 bake for 20 minutes. turn the lamb so that the skin is facing upwards. sprinkle the skin with salt. bake for a further 20 minutes the reduce heat to 200oc and cook for a further 20 minutes.
  • 4 allow to rest for 10 minutes before slicing.
