Pesto Lamb

Ingredients

  • Servings: 4
  • 1 1/4-1 1/2 lbs single boneless center cut lamb loin roast
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tablespoons butter
  • 1/2 cup heavy cream
  • 1/2 cup pesto sauce
  • 3 plum tomatoes, cut into bite-sized pieces

Recipe

  • 1 cut lamb loin into 1/2-inch slices.
  • 2 place flour in a shallow dish.
  • 3 season lamb medallions with salt and pepper, then place in flour and coat evenly on both sides.
  • 4 melt 2 tablespoons butter in a large skillet over medium-high heat.
