Lamb And Sweet Potato Slow-cooker Stew Aust Ww 3.5

Ingredients

  • Servings: 4
  • 1 sweet potato (500gms cut into 2cm cubes)
  • 500 g lean lamb chops, deboned, cut into 4cm cubes
  • 400 g canned tomatoes, chopped
  • 1 garlic clove, crushed
  • 1/2 glass unsweetened orange juice (125ml)
  • 2 individual shallots, chopped (green parts only)
  • 1 teaspoon cumin seed
  • 1 1/2 tablespoons fresh lime juice
  • 2 tablespoons fresh coriander, chopped

Recipe

  • 1 place the sweet potato, lamb, tomatoes, garlic, orange juice, shallots and cumin in the base of a 5-litre capacity slow cooker. season well with salt and pepper. cover and cook on low setting for 7 hours.
  • 2 stir in the lime juice and coriander and cook for a further 5 minutes. taste to season and serve with steamed beans or broccoli.
