Lamb Artichoke And Bean Stew

Ingredients

- 1 1/2 lbs boneless lamb loin, cubed
- 1 (14 ounce) can diced tomatoes
- 1 (15 ounce) can navy beans, drained and rinsed
- 2/3 cup chicken broth
- 2 garlic cloves, minced
- 1 teaspoon dried rosemary
- 1 teaspoon orange zest
- 1 (14 ounce) can artichoke hearts, rinsed drained and quartered
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- salt and pepper
Recipe
- 1 combine all ingredients except artichokes, cornstarch, water, salt and pepper in slow cooker; cover and cook on low for 6-8 hours, adding artichoke hearts during the last 30 minutes.
- 2 turn heat to high and cook 10 minutes; stir in combined cornstarch and water, stirring 2-3 minutes.
- 3 season to taste with salt and pepper.
