Lamb Artichoke And Bean Stew

Ingredients

  • Servings: 6
  • 1 1/2 lbs boneless lamb loin, cubed
  • 1 (14 ounce) can diced tomatoes
  • 1 (15 ounce) can navy beans, drained and rinsed
  • 2/3 cup chicken broth
  • 2 garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon orange zest
  • 1 (14 ounce) can artichoke hearts, rinsed drained and quartered
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • salt and pepper

Recipe

  • 1 combine all ingredients except artichokes, cornstarch, water, salt and pepper in slow cooker; cover and cook on low for 6-8 hours, adding artichoke hearts during the last 30 minutes.
  • 2 turn heat to high and cook 10 minutes; stir in combined cornstarch and water, stirring 2-3 minutes.
  • 3 season to taste with salt and pepper.
