Lamb Burritos

Total Time: 8 hrs 25 mins Preparation Time: 25 mins Cook Time: 8 hrs

Ingredients

  • 1 (3 -4 lb) boneless lamb shoulder
  • 1 (14 1/2 ounce) can diced tomatoes with mild green chilies, undrained
  • 1/4 cup chili powder
  • 3 tablespoons minced garlic
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1 tablespoon jalapeno pepper, seeded and chopped
  • 1 teaspoon salt
  • 10 (8 inch) flour tortillas, warmed
  • sliced avocado (optional)
  • sour cream (optional)

Recipe

  • 1 cut roast in half; place in a 5 qt slow cooker.
  • 2 in a blender, combine the tomatoes, chili powder, garlic, lime juice, honey, jalapeno and salt; cover and process until smooth.
  • 3 pour over lamb.
  • 4 cover and cook on low for 8-10 hours or until meat is fork tender.
  • 5 shred lamb with two forks.
  • 6 using a slotted spoon, place about 1/2 cup lamb mixture down the center of each tortilla; top with avocado and sour cream if desired.
  • 7 fold sides and ends over filling and roll up.
