Lamb Chop Dinner

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 4 lamb chops
  • 1 tablespoon vegetable oil
  • 4 -6 potatoes, quartered
  • 4 large carrots, cut into 1 inch thick slices
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1 chicken stock cube
  • 1 cup boiling water
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons flour
  • 1 cup water

Recipe

  • 1 saute lamb chops in hot oil for 15 minutes in skillet, turning once; drain.
  • 2 top chops with vegetables.
  • 3 dissolve bouillion cube in boiling water; pour over vegtables and sprinkle with salt and pepper.
  • 4 reduce heat to simmer; cover and cook 30 minutes or until vegetables are tender.
  • 5 remove meat and vegetables to serving platter, reserving drippings in skillet.
  • 6 combine flour and 1 cup water, mixing until smooth.
  • 7 gradually add mixture to drippings; cook over medium heat until thickened and bubbly, stirring constantly.
  • 8 serve sauce with meat and vegetables.
