Ingredients

- 3 tablespoons olive oil
- 6 lamb chops, trimmed of fat
- 2 onions, finely chopped
- 2 stalks celery, finely chopped
- 1 -2 jalapeno chile, seeded, veined, finely chopped
- 2 garlic cloves, minced
- 2 cups basmati rice, uncooked
- 1 (10 3/4 ounce) can cream of mushroom soup
- 1 (10 3/4 ounce) can cream of celery soup
- 5 cups chicken stock
Recipe
- 1 brown lamb chops in olive oil, remove and set aside.
- 2 add rice, onion, celery, and chilies to the pan; sauté (stir-fry) for 2 minutes.
- 3 add garlic sauté another 2 minutes.
- 4 add 1 cup stock to pan, scrape to deglaze.
- 5 pour onion/rice mixture into the crock pot.
- 6 add the 2 cans of soup add remaining 4 cups of stock to the crock pot; mix well.
- 7 place the lamb chops on the onion/rice.
- 8 cook on high for 1 hour, then on low for 3 hours.
