Lamb Chops Ardennaise

Ingredients
- Servings: 4
- 12 slices bacon, thick-sliced, cut into small squares
- 6 ounces wine
- 3 green onions, finely chopped
- 4 lamb loin chops
- salt and pepper, to taste
- 2 tablespoons flour
- 2 ounces butter
- 1/2 cup whipping cream
- 1 teaspoon dijon mustard
- 1 tablespoon parsley, chopped
Recipe
- 1 place bacon in a bowl and cover with wine and onions.
- 2 let stand for 30 minutes.
- 3 drain and reserve wine.
- 4 lightly season lamb chops and dredge in flour.
- 5 heat butter and fry chops over moderate heat for 6 to 7 minutes per side.
- 6 add bacon and onions.
- 7 continue cooking for 2 to 3 minutes.
- 8 add the cream and the reserved wine and simmer for 10 to 12
- 9 minutes.
- 10 remove chops to a warm serving platter.
- 11 slightly reduce the sauce, add mustard and parsley.
- 12 adjust seasonings and spoon sauce over chops.
