Lamb Chops A La Dijon

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 lean boneless lamb chops
  • 1/2 cup dry breadcrumbs
  • 3 tablespoons dijon mustard
  • 3 tablespoons lemon juice
  • 1 tablespoon crushed capers

Recipe

  • 1 heat oven to 375.
  • 2 trim all visible fat from chops.
  • 3 spray 13x9 pan with non-stick cooking spray.
  • 4 put bread crumbs in one dish.
  • 5 in another dish combine the mustard, lemon juice, and capers.
  • 6 dip both sides of the chops in mustard mixture then in bread crumbs.
  • 7 place chops in baking pan and bake at 375 for 30 to 40 min.
  • 8 until lamb is no longer pink, turning once about half way through.
