Lamb Chops In A Creamy Mustard Sauce

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 6 lamb chops (1" thick)
  • salt and pepper
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1/4 cup wine
  • 1 tablespoon fresh lemon juice
  • 1 1/2 tablespoons flour
  • 1 cup light cream
  • 2 tablespoons dijon mustard
  • 1 dash red cayenne pepper

Recipe

  • 1 salt and pepper lamb chops and dredge in 2 tablespoons flour.
  • 2 heat butter in large skillet and brown chops well.
  • 3 add wine and lemon juice and simmer, covered for 45 to 50 minutes until very tender.
  • 4 remove chops to serving platter.
  • 5 in same skillet, stir 1 1/2 tablespoons of flour into drippings until smooth.
  • 6 stir in cream, mustard and red pepper.
  • 7 simmer, stirring for 1 minute.
  • 8 serve lamb chops with sauce.
