Lamb Chops In Orange-pineapple Sauce

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 6 lamb chops
  • salt
  • paprika
  • 1/2 cup butter or 1/2 cup margarine
  • 1/4 cup flour
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ginger, to taste
  • 2 tablespoons brown sugar
  • 1 cup orange juice
  • 1 cup water
  • 1/2 cup pineapple juice
  • 1 (13 1/2 ounce) can pineapple chunks (save juice)
  • 1/2 teaspoon hot sauce
  • 1 unpeeled orange, sliced

Recipe

  • 1 sprinkle lamb chops with salt and paprika.
  • 2 melt margarine in skillet, on medium heat; brown lamb chops in margarine.
  • 3 remove from skillet.
  • 4 stir flour, 1/2 tsp salt, pepper, ginger, and sugar into margarine mixture in skillet; mix until smooth.
  • 5 add orange juice, water, and pineapple juice slowly; bring to boil, stirring constantly.
  • 6 add hot sauce and lamb chops; cover, simmer for 20 minutes.
  • 7 add orange slices; cover.
  • 8 simmer for 15 minutes longer.
  • 9 serve over rice.
  • 10 spread pineapple chunks over lamb chops and remaining sauce.
