Lamb Chops In Orange-pineapple Sauce

Ingredients

- 6 lamb chops
- salt
- paprika
- 1/2 cup butter or 1/2 cup margarine
- 1/4 cup flour
- 1/4 teaspoon pepper
- 1/4 teaspoon ginger, to taste
- 2 tablespoons brown sugar
- 1 cup orange juice
- 1 cup water
- 1/2 cup pineapple juice
- 1 (13 1/2 ounce) can pineapple chunks (save juice)
- 1/2 teaspoon hot sauce
- 1 unpeeled orange, sliced
Recipe
- 1 sprinkle lamb chops with salt and paprika.
- 2 melt margarine in skillet, on medium heat; brown lamb chops in margarine.
- 3 remove from skillet.
- 4 stir flour, 1/2 tsp salt, pepper, ginger, and sugar into margarine mixture in skillet; mix until smooth.
- 5 add orange juice, water, and pineapple juice slowly; bring to boil, stirring constantly.
- 6 add hot sauce and lamb chops; cover, simmer for 20 minutes.
- 7 add orange slices; cover.
- 8 simmer for 15 minutes longer.
- 9 serve over rice.
- 10 spread pineapple chunks over lamb chops and remaining sauce.
