Lamb Chops In Wine

Ingredients

- 2 lean lamb chops
- salt
- pepper
- 1 teaspoon bacon grease
- 2 teaspoons flour
- 1/2 cup chicken broth (boil 1 bouillon cube in 1 cup of water)
- 1/2 cup dry wine
- 1 medium onion, sliced
- 1 (4 ounce) can mushrooms
Recipe
- 1 season chops with salt and pepper.
- 2 brown slowly on both sides in hot bacon grease.
- 3 remove from skillet.
- 4 stirring constantly, blend flour into grease.
- 5 add broth and wine.
- 6 when very smooth, return chops to skillet.
- 7 spread onion and mushrooms over chops.
- 8 cover skillet and simmer about 45 minutes turning once during cooking.
