Ingredients

- 1 tablespoon olive oil
- 4 center-cut lamb chops (about 10 oz each)
- salt and pepper
- 1 cup poblano pepper, seeded and chopped
- 1 cup yellow onion, chopped
- 1 cup heavy cream
- 1/4 cup water
Recipe
- 1 heat olive oil in large skillet over med-high heat until hot but not smoking.
- 2 season lamb with salt and pepper, and cook 4-5 min each side, until golden brown.
- 3 transfer lamb to plate and keep warm.
- 4 reduce heat to med-low.
- 5 add poblano chilis, onion, salt, and pepper and cook, stirring occasionally, for 6-7 minute.
- 6 stir in cream and waer and bring to simmer.
- 7 add lamb chops and cook for 2 min each side.
- 8 transfer to platter and pour cream sauce on top.
