Slow Cooker Pizza Lamb Chops

Ingredients
- Servings: 6
- 6 lamb loin chops, 1 inch thick (about 2 1/4 lb)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon vegetable oil
- 1 medium onion, chopped (1/2 cup)
- 2 cups diced tomatoes or 2 cups stewed tomatoes
- 1 teaspoon italian seasoning
- 1 teaspoon garlic powder
- 4 cups cooked rice
- 1 cup shredded mozzarella cheese (4 oz)
Recipe
- 1 in 12-inch skillet, heat oil over medium-high heat. add lamb; cook about 5 minutes, turning once, until brown.
- 2 place chops in 3 1/2- to 4-quart slow cooker.
- 3 sprinkle onion over lamb.
- 4 add canned tomatoes, italian seasoning, garlic powder, salt and pepper.
- 5 cover; cook on low heat setting 4 to 6 hours.
