Lamb Chops - Fried Rice Casserole

Ingredients

- 1 3/4 cups water
- 1 1/2 cups minute rice
- 2 slices bacon
- 2 beaten eggs
- 2 tablespoons water
- 1/4 cup sliced green onion, with tops
- 3 tablespoons soy sauce
- 4 lamb rib chops

Recipe
- 1 in a saucepan, bring the 1 3/4 cups water to boiling.
- 2 remove from heat; stir in rice.
- 3 cover; set aside.
- 4 in skillet cook bacon till crisp.
- 5 remove bacon and crumble, reserving 2 t. drippings.
- 6 set aside.
- 7 in bowl combine eggs and the 2 t. water.
- 8 in skillet, cook eggs in 1 t. of the reserved bacon drippings till set, stirring occasionally.
- 9 cut eggs in narrow strips.
- 10 add rice, bacon, onion and the 3 t. soy sauce to eggs; mix well.
- 11 turn into a greased 1 1/2 quart casserole.
- 12 in skillet brown chops on both sides in remaining 1 t. drippings.
- 13 arrange chops atop rice mixture; brush with additional soy sauce.
- 14 bake, covered, at 350 till chops are tender, about 40 minutes.
