Lamb Tenderloin With Parmesan Crust

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 (15 ounce) whole lamb tenderloin
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup butter, divided
  • 1 shallot
  • 1/2 cup dry wine
  • 1/4 cup grated parmesan cheese
  • 1/4 cup fine breadcrumbs

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 slice tenderloin in 1/4 inch slices; pound thin between sheets of waxed paper.
  • 3 dip into flour/salt/pepper mixture and saute very quickly in 2 t. of butter.
  • 4 place in single layer in 11" x 9" x 2" baking dish, sprayed with pam.
  • 5 dice shallot, saute; add wine and deglaze pan.
  • 6 add to baking dish putting over lamb slices.
  • 7 mix parmesan cheese, bread crumbs and 1/4 cup butter in food processor.
  • 8 make a log of the mixture.
  • 9 slice and press one slice on top of each slice of lamb (i just crumble on top of lamb and press down on slices).
  • 10 bake for 15 to 20 minutes.
