Lamb Tenderloin With Plum Sauce

Ingredients

  • Servings: 8
  • 1 (4 -6 lb) lamb loin
  • 3 tablespoons sherry wine (optional)
  • 3/4 cup soy sauce
  • 4 teaspoons brown sugar
  • 2 teaspoons salt
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon ground ginger
  • 18 ounces plum preserves
  • 1 cup chutney
  • 2 tablespoons vinegar

Recipe

  • 1 lamb loin directions.
  • 2 mix all ingredients into a large resealable bag.
  • 3 place lamb loin in bag.
  • 4 squeeze out as much air as possible and seal bag.
  • 5 let lamb loin marinate in refrigerator overnight or for at least 12 hours.
  • 6 place meat in broiler pan and brown at 450°f for 10 minutes.
  • 7 baste with marinade and turn down to 325°f.
  • 8 roast for 1 to 2 hours or until meat thermometer reaches 165°f.
