Lamb Tenderloin With Plum Sauce

Ingredients

- 1 (4 -6 lb) lamb loin
- 3 tablespoons sherry wine (optional)
- 3/4 cup soy sauce
- 4 teaspoons brown sugar
- 2 teaspoons salt
- 1 1/2 teaspoons cinnamon
- 3/4 teaspoon ground cloves
- 3/4 teaspoon ground ginger
- 18 ounces plum preserves
- 1 cup chutney
- 2 tablespoons vinegar
Recipe
- 1 lamb loin directions.
- 2 mix all ingredients into a large resealable bag.
- 3 place lamb loin in bag.
- 4 squeeze out as much air as possible and seal bag.
- 5 let lamb loin marinate in refrigerator overnight or for at least 12 hours.
- 6 place meat in broiler pan and brown at 450°f for 10 minutes.
- 7 baste with marinade and turn down to 325°f.
- 8 roast for 1 to 2 hours or until meat thermometer reaches 165°f.
- 9 remove from oven and let meat rest 10-15 minutes and slice.
