Pulled Lamb And Wild Rice Stew

Ingredients

- 2 tablespoons extra virgin olive oil
- 1 (2 -2 1/2 lb) boneless lamb shoulder, cut into 2-inch cubes

- 1 lb wild rice
- 3 tomatoes, cored and quartered
- 2 cups salsa fresca
- 1 bunch scallion, chopped

Recipe
- 1 in a 5- to 6-quart dutch oven, heat the olive oil over medium-high heat. season the lamb with 2 teaspoons salt.
- 2 add the lamb to the skillet and cook, turning occasionally, until golden-brown, about 15 minutes. add the chicken broth, bring to a simmer, cover and cook for 1 hour.
