Lamb Chili With Greens

Total Time: 6 hrs 15 mins Preparation Time: 15 mins Cook Time: 6 hrs

Ingredients

  • Servings: 8
  • 1 1/2 lbs ground lean lamb or 1 1/2 lbs turkey
  • 2 (15 ounce) cans kidney beans, drained and rinsed
  • 2 (15 ounce) cans petite diced tomatoes (do not drain)
  • 1/2 cup chopped onion
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 8 ounces kale or 8 ounces spinach, coarsely chopped
  • salt and pepper

Recipe

  • 1 cook lamb in lightly greased large skillet until browned, about 10 minutes, crumbling with a fork.
  • 2 combine lamb and remaining ingredients, except kale, salt and pepper, in slow cooker.
  • 3 cover and cook on low 6-8 hours, stirring in kale during the last 20 minutes.
  • 4 season to taste with salt and pepper.
