Lamb Chops In Applesauce

Ingredients

- 2 tablespoons honey mustard
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1/2 cup maple syrup, divided
- 4 lamb loin chops (about 3/4-inch thick)
- 1 cup prepared chunky applesauce
- 1 cup pecan halves, broken into large chunks
- 2 tablespoons apple brandy (french is best)
Recipe
- 1 in a small bowl, combine the mustard, pepper, salt, and 2 tsp syrup.
- 2 brush over both sides of the lamb chops.
- 3 brown lamb in a non-stick skillet over medium heat for 2 to 3 minutes per side, or until done to your liking.
- 4 add apple sauce. reduce heat; cover and simmer for 15 to 20 minutes or until meat is tender.
- 5 remove chops and keep warm.
- 6 in a small frying pan, add pecans, remaining syrup, and apple brandy. cook on high heat for 1 to 2 minutes or until hot and bubbly.
- 7 pour sauce over lamb and serve immediately.
