Lamb Chops In Black Beans

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 lamb chops, boneless
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1 (15 ounce) can black beans
  • 1/2 cup salsa
  • 2 tablespoons cheddar cheese, shredded
  • 2 tablespoons green onions, chopped

Recipe

  • 1 sprinkle chops with a little salt and chili powder, sear both sides in a super-hot pan
  • 2 rinse a can of black beans and pour it over the top.
  • 3 pour a 1/2 cup of your favorite salsa on top of this.
  • 4 cover with a lid.
  • 5 turn the heat down to low and cook for 15-20 minutes depending on the thickness of the chop, they can also be put in the oven at about 325 for 20 minutes or so if you prefer, or if they're really thick.
  • 6 when they come out, sprinkle some sharp cheddar and chopped green onion on them.
