Slow Cooker Irish Stew

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • Servings: 4
  • 1 lb lean boneless lamb
  • 1 tablespoon cooking oil
  • 2 medium turnips, peeled and cut into 1/2 inch pieces
  • 3 medium carrots, cut into 1/2 inch pieces
  • 2 medium potatoes, cut into 1/2 inch pieces
  • 2 medium onions, cut into wedges
  • 1/4 cup quick-cooking tapioca
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon thyme
  • 3 cups beef broth

Recipe

  • 1 cut the lamb into bite size cubes and brown it in the oil in a large skillet. drain off the fat.
  • 2 combine all ingredients in a slow cooker/crock pot. cook on low for 6-8 hours or high 3-4 hours.
