Slow Cooker Lamb Pozole

Total Time: 7 hrs 15 mins Preparation Time: 15 mins Cook Time: 7 hrs

Ingredients

  • Servings: 6
  • 2 lbs boneless lamb butt, fat trimmed, cut into bit-size chunks
  • 1 (12 ounce) jar recaito
  • 1 (15 -16 ounce) can hominy, rinsed

Recipe

  • 1 put lamb and recaito in a 3-quart or larger slow-cooker; stir to mix and coat.
  • 2 cover and cook on low 7 to 9 hours, or until lamb is very tender.
  • 3 stir in hominy, cover and cook 10 minutes to heat hominy; if desired, garnish with chopped cilantro and radishes.
  • 4 good served with warm flour tortillas.
