Lamb Chops Dijon - Low Carb

Ingredients

- 4 lamb loin chops, cut 1/2-inch thick
- 1 tablespoon cooking oil
- 3 tablespoons dijon-style mustard
- 2 tablespoons bottled low-carb italian salad dressing (no sugar added)
- 1/4 teaspoon black pepper
- 1 medium onion, halved & sliced
Recipe
- 1 in a large skillet, cook meat in hot oil over medium-high heat for 5 minutes or just until brown, turning once.
- 2 remove meat from skillet.
- 3 in a small bowl combine mustard, italian dressing and pepper; set aside.
- 4 add onion to skillet.
- 5 cook and stir over medium heat for 5 minutes.
- 6 push onion aside; return meat to skillet.
- 7 spread mustard mixture over meat.
- 8 cover and cook over medium-low heat for 10 minutes or until done (160 degrees f) and juices run clear.
- 9 serve with onion over meat.
