Lamb Chops Dijon - Low Carb

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 4 lamb loin chops, cut 1/2-inch thick
  • 1 tablespoon cooking oil
  • 3 tablespoons dijon-style mustard
  • 2 tablespoons bottled low-carb italian salad dressing (no sugar added)
  • 1/4 teaspoon black pepper
  • 1 medium onion, halved & sliced

Recipe

  • 1 in a large skillet, cook meat in hot oil over medium-high heat for 5 minutes or just until brown, turning once.
  • 2 remove meat from skillet.
  • 3 in a small bowl combine mustard, italian dressing and pepper; set aside.
  • 4 add onion to skillet.
  • 5 cook and stir over medium heat for 5 minutes.
  • 6 push onion aside; return meat to skillet.
  • 7 spread mustard mixture over meat.
  • 8 cover and cook over medium-low heat for 10 minutes or until done (160 degrees f) and juices run clear.
  • 9 serve with onion over meat.
